Paul Freedman

Yale University

Paul Freedman is a professor of medieval history at Yale University in the United States. He has focused his work on Catalonia and also written comparative works on the medieval peasantry. He is also the author of two books about food in the United States: Ten Restaurants That Changed America, and American Cuisine and How It Got This Way, and most recently Why Food Matters (2021).
